In designing the interior and visual appearance of Bistro FRANZ, we drew inspiration from the original Parisian bistros, where this type of establishment originated. Bistros are traditionally small (family-run) restaurants that serve simple, quality dishes, drinks, and coffee throughout the day, even late into the night. Their interiors differ from those of "larger" restaurants with a certain "homely" simplicity, yet also possess a strong character that attracts a loyal circle of customers.
Therefore, we chose traditional materials (wood, metal, glass, tin), which we processed into simple shapes of furniture with vibrant colors. The interior is modern yet traditional, just like the food made from local ingredients that the bistro offers. Customers should feel at home in the bistro, while also appreciating its unique form.
The bistro is named FRANZ after architect František Pavlů, who designed the building where our establishment is located. Pavlů was a prominent figure in the Art Nouveau period of Brno, the author of Tivoli and many other buildings. None of the original interior remains at Veveří 14, so we chose a somewhat archaeological method and revealed the original rough plaster from 1905, using colors from the building's façade in the interior to establish a connection to Mr. Pavlů, at least in part.
