Program
An investor and winemaker came to us with his dream of creating a functional winery in the heart of Znojmo, in a Renaissance house on Masaryk Square. The task was to create a place where wine would be produced, sold, and tasted. At the same time, it would be a place for feasting, hosting events, and accommodating guests.
The ambitious program demanded the use of every centimeter of all levels of the burgher house, its courtyard, and the cellars connecting to the historical underground of Znojmo.

Winebar
Five years ago, the renovation started with a small wine bar. The space under a pair of ribbed vaults is naturally divided into two parts. At the entrance, there is seating for guests, with a striking chandelier in the shape of a cross and a long bench. The second part is dominated by a work table/bar and a sturdy wine shelf.
We do not touch the vaults, only illuminate them. We used the crossing as a basic motif that permeates the entire interior.

Passage
The passage is the main entrance, a crossroads of all operations, a storage for winemaking equipment and technology, a place where wine ages in ceramic kvevri vessels built into the floor. From the passage, one enters the accommodation upstairs and it is also opened for larger events as the main passage for visitors directly into the courtyard. It is a place where visitors can take a peek under the winemaker's lid.

Courtyard
The courtyard is the greatest quality of the project. The narrow plot is situated between a pair of high walls. The first is a stone wall, beautifully weathered, belonging to the former Capuchin monastery, while the second is a bare wall belonging to an oversized, long-term non-functioning cultural center from the late 80s. The walls frame a beautiful view of the Capuchin garden and the representative building of the court. We further enhanced the view by lowering the boundary wall and demolishing the courtyard buildings. A practical necessity was to design an extension in the courtyard with service rooms. We decided to attach it to the ugly wall of the cultural center, thereby setting it back and allowing the monastery wall to stand out as much as possible. The extension stands in the footprint of the former courtyard wing, which was destroyed during the war. Only the cellars of this wing remained, which we utilized for production spaces.
We proposed a contemporary pavilion hidden from outside views, with a roof that serves as a viewing terrace and an expansion of the courtyard space. It is connected to the courtyard by an expanding concrete staircase.
We combine wood, concrete, and steel, materials that can age gracefully.

Cellars
The cellars are accessed through secret doors in the façade of the extension. We intentionally preserve the authenticity of the underground with almost no intervention. The cellars on the first level are packed with stainless steel tanks; this is where the main production areas of the winery are located. The second level of the cellars houses the barrels. This part directly connects to the historical underground of Znojmo.
