The bakery and café Paneolit are part of a broader concept called Pekárenský dvůr, which Studio Identity Designers approached comprehensively – from architectural solutions to the interiors of individual operations.

The Pekárenský dvůr project was created in the Brno-Zábrdovice district, in a place where the first bakeries in Brno were established 100 years ago. The memory of the parcel thus became a natural starting point for the entire design.

Right from the beginning, it was clear that the concept could not remain merely symbolic. The shared spaces for residents and the commercial part of the building had to carry this history forward in a real, everyday form. Therefore, the Pekárenský dvůr could not exist without a bakery as its inseparable part.

In the end, the Paneolit bakery found its new home here – a contemporary interpretation of the original function of the place, which naturally connects the past with the present life of the residential complex.

The spaces of the bakery and café are naturally connected to the entrance lobby of the residential part of the building, the reception, and the residential lounge. This creates a smooth sequence of public and semi-public spaces, where seating in the lounge seamlessly intertwines with the café and extends its atmosphere into other parts of the building.

Paneolit is a brand whose name carries the entire story. 'PAN' as bread and 'NEOLIT' as the period when its production became the foundation of civilization. This return to the beginnings, to the essence, and to the elemental principles of baking became the guiding idea of our architectural approach.

Bread is perceived as the main actor in the space. The interior consciously recedes to create a simple, raw background that allows it to stand out. Exposed concrete, brick cladding, and black walls form a neutral frame against which the natural orange-yellow color of the crispy crust contrasts starkly. Thus, bread becomes the main visual and thematic accent of the entire space.

The material language is intentionally elemental and truthful. Freestanding furniture, especially tables, is designed from raw, unrefined stone with irregular shapes and natural edges. Their mass and imperfection refer to working with natural materials without striving for aestheticization. Minimalism here serves not as a style but as a tool for focusing attention – on food, aroma, and the process itself.

The atmosphere of the space is intended to be pleasant, warm, and open, yet without unnecessary decoration. The main motif connecting the bakery and café is dried grains. As a quiet, almost archetypal decoration, it evokes the very beginning of the entire cycle – the origin of bread, the relationship to the land, and the raw material. The interior thus functions as a natural continuation of the philosophy of the Paneolit brand: unobtrusive, focused, and anchored in essence.
