Construction work has begun on site, and equipment installation is being prepared. The investor waited for months for the permit, but a prolonged construction process should not threaten the brewery's opening at the turn of August and September, said Čestmír Benda from the brewery today to ČTK. On Saturday, people will be able to influence the type of beer that will be brewed in the brewery in the future during the beer festival. The building in which the new microbrewery will rise is a listed monument. This is also why it took the investor several months to handle all the necessary permits. Beer production will return to the grounds of the former Hostan after six years. However, locals will be able to influence the character of the new Znojmo beer as early as this Saturday. The investor behind the new operation had two types of beer brewed using a similar method at another location - one with the character of the earlier Hostan and another with a larger portion of hops. "At the Znojmo beer festival, both beers will be tapped, people will express their preferences regarding the taste, and we will then select the new beer according to their feedback,” Benda stated. The Znojmo City Brewery has already brewed beer in reserve to last until the actual opening of the brewery. Within five years, it plans to brew up to 10,000 hectoliters, with the first phase aiming for 4,000 hectoliters. The investment costs are around 30 million crowns. In the brewery area in Znojmo, which adjoins the Romanesque rotunda of St. Catherine and the castle and forms one of the city's landmarks, Heineken previously operated. In 2009, however, beer production ceased in the area, and Heineken moved the Hostan production to Brno, where it continues to operate the brand. The new investor signed a contract with the city at the end of last year. The city council rented part of the area to the private Znojmo City Brewery for 15 years with an equally long option. The city had to transfer obligations to the tenant that arose from the contract made when the area was purchased. Although the new brewery company can brew beer on the premises, it is not allowed to sell or promote it there. This restriction applies for five years. Therefore, the company rented a restaurant in the main square of Znojmo. In addition to the microbrewery in Znojmo, another investment is also planned in Znojemsko, namely the Firefighter Brewery in Bítov. The owner informs on the website that people could taste the first beer at Christmas. The brewery with a pub earned its name by being established in the former fire station. Construction work is already underway, and the installation of equipment is scheduled for September.
